Raw Neopolitan Nicecream Cake

This cake was too beautiful to eat. I grew up having my mom buy a tub of Neopolitan icecream every week. It was not the healthiest kind but it was definitely the inspiration behind this guilt-free cake. I hope you enjoy it as much as I have!

Yield: 1 cake
You will need:
Crust:
-1/2 cup pitted dates (soaking for at least 10 minutes)
-1/4 cup walnuts (any nut)
-1/4 cup shredded coconut
-A dash of cinnamon (optional)
Pink Layer:
-1/2 cup frozen raspberries
-1/2 cup coconut milk
-1 tablespoon coconut oil
White Layer:
-2 bananas
-1 tablespoons coconut oil

Directions:
1. Process the crust ingredients and press into lined pan
2. Blend the pink layer ingredients together and spread over crust. Place in the freezer to harden
3. Blend the white layer ingredients together and spread over the pink layer. Place in the freezer to harden. Slice and enjoy!
