Raw Ginger Chocolate Nicecream Cake

Last of my baking for this morning... Creating a raw layered cheesecake with a layer of chocolate peanut butter and another layer of lemon ginger ☺ 2 thumbs up for sure! 👍👍

Yield: 1 cheesecake
You will need:
Crust:
-1/2 cup nuts
-1 cup pitted dates (soak for 10 minutes if hard)
-1 tablespoon sesame seeds (or tahini)
-2 tablespoons shredded coconut
-A dash of cinnamon
Chocolate Peanut Butter Layer:
-1/4 cup soaked cashews (for at least 4 hours in water)
-2 tablespoons peanut butter
-1/4 cup Coconut milk
-1 tablespoon cocoa
-1 banana
-2 soaked dates
Lemon Ginger Layer:
-1/4 cup Cashews (soaked in water for at least 4 hours)
-Juice and Rind of 1/2 lemon
-1/4 cup Coconut milk
-1 banana
-2 soaked dates
-A splash of vanilla
-1/2 teaspoon turmeric
-1/2 teaspoon ground ginger

Directions:
1. Process the ingredients for the crust in the food processor and press in a pan lined with plastic wrap or parchment paper and place in freezer to harden
2. Blend the ingredients for the lemon ginger layer and pour over crust. Place in the freezer to harden
3. Blend the ingredients for the chocolate layer and spread over the lemon ginger layer. Place in freezer to harden. Slice and enjoy!
*Play around with the flavours for each layer or even double the recipe for one layer to make it one flavour
