Pumpkin Mint Tarts

Made some mint chocolate bites. All I can say is that they're very tasty and remind me of a peppermint patty! A great snack on the go too! Enjoy!

Yield:4 mini tarts
You will need:
Crust:
-3/4 cup walnuts
-3/4 cup pitted dates (soak for 10 minutes if hard)
-2 tablespoons shredded coconut
-1 tablespoon cocoa
Pumpkin Filling:
-1 cup pumpkin purée
-3 tablespoons Tahini
-1 1/2 tablespoon cocoa
-1/2 teaspoon mint extract (optional)

Directions :
1. Process the crust ingredients in the food processor until it becomes a dough
2. Press dough in muffin cups/molds
3. Blend the pumpkin filling ingredients together and pour over crust
4. Freeze for at least 30 minutes before enjoying
*This can be made in one larger pan lined with plastic wrap and sliced as a pie
