*Last Minute Energy Fruit Bowl

I am always looking for something quick to eat as I'm busy feeding my 2 boys and prepping lunch and dinner. This here was a satisfyingly delicious breakfast that I whipped together. You can use any fruit you like! Yield: 1 serving You will need: -2 chopped apples -1-2 cups blueberries -2-3 tablespoons peanut butter/almond butter (I used peanut flour) -3 tablespoons chia pudding -1/4 cup cashew milk  (any milk) -A sprinkle of rawnola Directions: Mix all the ingredients together and enjoy!

*Raw "Eatmore" Cupcakes

Raw cupcakes made with an "Eatmore" base and sone delicious icings. You can be as creative as you like with the icings, using cashew cream, nicecreams, or even eating them without the icing! Either way, you will not be disappointed! Enjoy! Yield: 6 cupcakes You will need: Base: -22 pitted Medjool Dates -1 cup hemp seeds -2-3 tablespoons raw carob powder Banana Icing: -2 tablespoons peanut butter -2 ripe bananas Berry Icing: -2-3 tablespoons tahini -1 cup of berries (any berry will work) Directions: 1. Using a food processor, mix the dates and Carob powder until mixed and broken down 2. Add the hemp seeds in and pulse a few times until combined 3. Press the date base into lined cupcake pan or molds and set aside 4. Mix each of the 2 flavors of icing ingredients with a blender and spread over each cupcake base 5. Place the cupcakes into the freezer to harden 6. Once hard enough, remove from molds and store in an airtight container in the freezer until read

*Cookie Dough Granola Crumble

Don't you love topping smoothie bowls, yogurt, icecream, and oatmeal with a nice granola for added texture and oomph? This granola mix took me 2 minutes to put together and it is everything you could desire. A perfect chew and crunch to top off any dish or eat as is! Yield: 1 cup You will need: -1/4 cup oat flour -1 cup pitted dates -1/4 cup cocoa nibs/chocolate chips -2 tablespoons shredded coconut -1/2 teaspoon cinnamon -A dash of Himalayan sea salt (optional) Directions: 1. Usinf a food processor, mix all the ingredients together until a rough crumble is formed (don't blend too long or else it turns into a dough) 2. Pulse in the cocoa nibs/chocolate chips at the end so that they stay chunky 3. Store in an airtight container in the fridge/freezer *Feel free to add in anything else you like! Like nuts, seeds, dried fruit (cranberries, mulberries,), etc.

**Healthy "Eatmore" Bars

These remind me of the energy nuggets sold at Planet Organic. They taste the exact same and taste so amazing. They're so easy to make and only have 4 ingredients. Enjoy! Yield: 6 bars You will need: -3/4 cup hemp seeds -1 teaspoon cinnamon -16 pitted medjool dates -2-3 tablespoons raw carob powder Directions: Using a food processor, blend all the ingredients together and press down in a plastic wrap lined dish for easy molding and cutting or roll into balls. Enjoy!

*Zucchini Glory Dressing

This salad dressing recipe reminds me of the glory dressing at Hearts Choices. I tweaked it slightly to suit my tastebuds. Sometimes the simplist dressings are the tastiest. You will not be disappointed! You will need: -2 cups peeled zucchini -2 stalks of celery -1/2 cup nutritional yeast -1/4 cup apple cider vinegar/lemon juice -1/2 teaspoon garlic powder -2 tablespoons hemp seeds -a splash of water -optional flavour additions: 3 tablespoons coconut aminos and fresh dill -optional: add a touch of chipotle/smoked paprika for a kick Directions: 1. Blend all the ingredients together and place in a container in the fridge until ready to use 2. Pour this dressing over salad, over rice, quinoa, potatoes or anything else you would like! *if the dressing gets too thick after being on the fridge, add a little touch of water and mix with a fork

**Watermelon Mint Salad

I live watermelon and I love the combination of watermelon and mint... Whether Ina salad or smoothie! Right here is one of the easiest summer salads you can make and I can promise that your guests and yourself will devour the whole thing :) Yield: 1 large salad You will need: -1/2 large watermelon (diced up into small cubes) -1 cup chopped fresh mint -1 teaspoon cracked black pepper -Juice of 1/2-1 lemon Directions: Mix all the salad ingredients together and place in fridge until ready to serve *If the salad sits in the fridge ahead of time by a couple hours, the flavors will settle in *Adjust the amount of lemon juice, depending on the size of your salad

*Healthy Raw Chocolate Sauce

Healthy raw chocolate sauce made with only 3 of the simplest ingredients and SO versatile! Keeps well refrigerated for a week, or can be frozen in moulds for a healthy and decadent fudgey treat! Mmmmmm Yield: About 2 cups of sauce You will need: -2/3 cup pitted dates  (soaking in water for a couple hours) -3 tablespoons Cocoa (about 1/4 cup) -1 can full fat coconut milk Directions: Blend all the ingredients together and place in an airtight container and store in the fridge.

*Apple Strawberry Tower

An ooey gooey apple tower of goodness 😍 layered with strawberries, bananas and cinnamon date sauce). This was fun making and watching it fall apart as I ate it! Great ideas for kids too! Yield: 1 tower You will need: -1-2 apples (cored and sliced thin) -2 bananas (sliced) -10 dates (soaking in water for at least 10 minutes) -A dash of cinnamon Directions: 1. Blend the dates with 1 banana and some cinnamon 2. Alternate layers of the apples, banana and date sauce 3. Eat right away!
