*Raw "Eatmore" Cupcakes
Raw cupcakes made with an "Eatmore" base and sone delicious icings. You can be as creative as you like with the icings, using cashew cream, nicecreams, or even eating them without the icing! Either way, you will not be disappointed! Enjoy!
Yield: 6 cupcakes
You will need:
Base:
-22 pitted Medjool Dates
-1 cup hemp seeds
-2-3 tablespoons raw carob powder
Banana Icing:
-2 tablespoons peanut butter
-2 ripe bananas
Berry Icing:
-2-3 tablespoons tahini
-1 cup of berries (any berry will work)
Directions:
1. Using a food processor, mix the dates and Carob powder until mixed and broken down
2. Add the hemp seeds in and pulse a few times until combined
3. Press the date base into lined cupcake pan or molds and set aside
4. Mix each of the 2 flavors of icing ingredients with a blender and spread over each cupcake base
5. Place the cupcakes into the freezer to harden
6. Once hard enough, remove from molds and store in an airtight container in the freezer until ready to serve
