Soft and Chewy Chocolate Chip Cookies

OMG is all I have to say! These cookies are so gooey from the inside and hit all the right notes. The inside is filled with the perfect amount of chocolate chips (you could even try adding peanut butter chips or white chocolate chips for a nice twist in flavor too!). These cookies will definitely be added to your "favorites" list! Yield: 6 large cookies You will need: -1 cup oat flour (any flour should work) -1/2 teaspoon cinnamon -1/2 teaspoon baking powder -1/8-1/4 cup maple syrup (depending on how much you like the flavor of maple syrup... you can also substitute for another sweetener) -1 large tablespoon coconut oil (any oil) -2 tablespoons milk -1 tablespoon chia seed -1/4 cup chocolate/carob chips -pinch of salt Directions: 1. Preheat oven to 325 degrees 2. Using a food processor, mix the dry ingredients together and then mix in the wet ingredients until combined 3. Chewy Caramel Oatmeal Cookies

I decided to whip up a batch of these cookies while sitting to watch a movie at 9:30 in the evening. They were so quick to make, that I was sitting back down to watch the test of the movie and munching on the warm and gooey cookies before 10pm! These cookies are so chewy and have a caramel flavour with the big chunks of dates. I can't wait for Julien and Zayn to wake up and see these cookies waiting for them in the kitchen! Yield: 9 large cookies You will need: -1 cup oats (I used steel cut oats) -2 tablespoons chia seeds -2 ripe bananas -dash of cinnamon -1/4 cup peanut butter (any nut/seed butter, or even chopped nuts) -8 pitted medjool dates Directions: 1. Preheat oven to 375 degrees 2. Using a food processor, mix all the ingredients together (except for the dates) until well combined 3. Add the dates at the end and mix enough so they stay chunky 4. I bought so many blueberries and started thinking of things I could make with them... Smoothies, Nicecream... Jam? I've been wanting to make chia seed jam, so I thought I'd give it a whirl with all these blueberries. Such a great addition to a peanut butter sandwich or even a topping on pancakes, smoothies, or anything you like! Yield: About 2 cups of jam You will need: -3 cups of blueberries (or any choice of fruit) -4 tablespoons of chia seeds Directions: Blend all the ingredients together and place in fridge to set. This should be good for up to 1 week in the fridge. *Add any sweetener you like to make it a little sweeter

*Crunchy Papaya Fruit Salad

Delicious dessert prepared for last night. Making it beforehand is awesome because the dates soak in the juices and become chewy.  I love combining celery into my fruit salads to add a crunchy texture and to settle the sweetness. And let's face it... Who doesn't like celery?! Yield: 1 generous lunch You will need: -1 chopped up papaya -4 celery stalks (chopped) -A dash of cinnamon -1 cup chopped up dates Directions: Mix all the ingredients together and enjoy!

Creamy Cheesy Alfredo Sauce

This sauce is one of the best sauces that could be poured over any pasta. Its is a definite crowd pleaser, vegan or not! Such simple ingredients combined to give a velvety sauce reminiscent of cheesy alfredo! Yield : 3 cups of sauce You will need: -1/4 cup coconut oil* -1/3 cup GF flour -2-3 cups milk of choice(depending on how runny you would like your sauce) -2 tablespoons tomato puree -1 teaspoon garlic powder -1 tablespoon lemon juice (or 1/2 tablespoon apple cider vinegar) -1/2 cup nutritional yeast -dash of salt (optional) Directions: 1. Create a roux by melting the oil and slowly adding and whisking in all the flour. This will make somewhat of a thick roux as the base of your thickening agent to the sauce 2. Add in all the rest of the ingredients and allow to heat through on low, whciking throughout 3. It may not seem quite thick but as it cools, the sauce will get a little thicker 4. Pour this sauce over your choice of noodle. Feel free to add in any extra vege

*Nutty Overnight Oats

Another one of my favorite speedy breakfasts that I prepare at night and dream about till the morning... Introducing... My Nutty Overnight Oats! This would be a favorite for anyone who is in love with the nutty flavors. I've tried this with sunflower seed butter once and it was a hit! So feel free to customize it in any way you like. Yield: 1 jar You will need: -1/2 Cup Oats -1 Cup Almond Milk Milk (or any milk of choice) -1 mashed Banana -2 tablespoons Almond Butter -1 teaspoon Chia Seeds -1 handful Raisins (optional) Directions: 1. Place all ingredients in jar, close the lid and shake, shake, shake! 2. Place in fridge overnight  3. Top with your favorite fruit. Enjoy cold or warm!

*Sunflower Cookie Dough

These cookie dough balls were lucky to exist for the photo! Zayn helped me roll them into balls and I believe his dada and him ate the other half of the batch! It is definitely finger licking good. This is a great recipe to whip up if you have nu t allergies, but feel free to adjust the seed butter to any nut butter of your choosing... I promise that you will not be disappointed! Yield: 12 small balls You will need: -1/4 cup sunflower butter (any nut/seed butter) -1/3 cup almond flour (or oat flour) -1 1/2 tablespoon maple syrup (any sweetener you like) -2 teaspoons coconut flour -1 tablespoon coconut oil -pinch of salt (optional) -3 tablespoons cocoa nibs/carob/chocolate chips (optional) Directions: 1. Mix everything together (except for cocoa nibs) in a food processor/blender until combined 2. Add cocoa nibs/chips and pulse a couple times to combine 3. Roll the dough into balls and place in freezer for at least 30minutes to harden enough to enjoy *Keep these gems stor

Sweet Potato Simple Curry

I had purchased a variety of different colored sweet potatoes and wanted to do something different than our typical sweet potato fries. This was such a success that even Hass requested it for dinner again! Such warm flavors, your belly will be thanking you! Yield: Enough for a family of 4 with plenty of leftovers You will need: Sweet Potato Curry Sauce/Soup: -6 cups diced up and peeled sweet potato (any variety will do) -1 litre vegetable broth -1 cup milk of choice -1/2-1 tablespoon curry powder (depending on how intense you like it) -black pepper Indian Style Rice: -2 cups rice -2 tablespoons coconut oil (any oil) -2 cloves garlic (or use some garlic powder) -1/8 teaspoon cinnamon -1 teaspoon curry powder or turmeric Directions: Sweet Potato Curry Sauce/Soup: 1. Steam the potatoes and add the seasoning, broth and milk and let it come to a slight boil 2. *5 Ingredient Chocolate Blender Cupcakes

These cupcakes were so quick to make. I wanted to create something with very few ingredients that was still rich and moist in flavor and a nice treat at any time of day. The date paste did the trick, but I am going to try them again with banana and apple sauce to see the difference. These were a definite success and there is no fat at all! (Just omit the peanut butter in the frosting and you'really good to go!). I couldn't hold the boys back as I took them out of the oven. Yet, they patiently waited once they saw the chocolate frosting I had prepared to top them off with. This will be a recipe I will be making on a regular basis for sure! *Oat Pulp Cookies

After making a batch of oat milk, I was staring at the leftover pulp from the oats and thinking what I could use it in? I didn't have the heart to dispose of it so I created these cookies from whatever I found in my fridge and pantry (as well as some carrot pulp leftover from carrot juice!). They turned out so amazing and reminded me of warm fall flavors. Yield: 9 cookies You will need: -1/2 cup oat pulp (or you could use rolled oats) -1/4 cup peanut butter -1/3 cup carrot pulp (or shredded carrots) -1/2 ripe banana -2 tablespoons date sugar (any sweetener) -1/2 tablespoon baking powder -1/4 cup chocolate chips/cocoa nibs (optional) Directions: 1. Preheat the oven to 350 degrees F 2. Using a food processor, pulse everything together just until combined (mixing in the chocolate chips at the end so they don't get broken down) 3. Place spoonfuls of cookie batter on a parchment lined paper and bake in the oven for 18-20 minutes 4. Store any leftovers in an airtight

I came home after work and felt like getting some cookies in the oven so that when the boys would walk in, they would enjoy a special treat and the delicious smell of baked treats. I wanted to make an oatmeal cookie that didnt include nuts and I was quite successful! Feel free to adjust any ingredients as you like! Yield: 8 large cookies You will need: -1/2 cup oat flour -1/2 teaspoon cinnamon -1/2 teaspoon baking powder -1 cup pitted dates (soaked in water for at least 30 min) -1/4 cup milk of choice -2 tablespoons hemp seeds -1-2 scoops chocolate protein (I used Chocolate  Sunwarrior Blend) -1 ripe banana (or 1/2 cup of apple sauce) Directions: 1. Preheat the oven to 350 degrees 2. Mix the first 3 ingredients together in a bowl 3. Blend the dates with the milk and add the the dry ingredients in the bowl 4. Add the hemp seeds and mix the dough until combined and allow to sit for about 5 minutes 5. Mash in 1 ripe banana (or apple sauce) and leave the banana a little c

*Carrot Pineapple Juice Pulp Bites

Growing up, I can remember always baking a carrot cake that had crushed pineapple in it. I was inspired to make these energy bites after juicing some carrots and pineapple (which were sitting in my fridge for a while and needed to be juiced). Instead of composting the pulp, I decided to create carrot cake bites inspired by the cake I had growing up. What a success! Yield: depends on how much pulp you have You will need: -carrot pulp (or a combination of carrot and pineapple pulp like mine) -dash of cinnamon -6 pitted medjool dates for every cup of pulp -2 tablespoons hemp seeds for every cup of pulp Directions: 1. Using a food processor, mix everything together until combined 2. Roll the dough into balls and refrigerate *feel free to add shredded coconut, but butters, any seeds of choice *for a fancier look, roll the balls in shredded coconut
