*Oat Pulp Cookies
After making a batch of oat milk, I was staring at the leftover pulp from the oats and thinking what I could use it in? I didn't have the heart to dispose of it so I created these cookies from whatever I found in my fridge and pantry (as well as some carrot pulp leftover from carrot juice!). They turned out so amazing and reminded me of warm fall flavors.
Yield: 9 cookies
You will need:
-1/2 cup oat pulp (or you could use rolled oats)
-1/4 cup peanut butter
-1/3 cup carrot pulp (or shredded carrots)
-1/2 ripe banana
-2 tablespoons date sugar (any sweetener)
-1/2 tablespoon baking powder
-1/4 cup chocolate chips/cocoa nibs (optional)
Directions:
1. Preheat the oven to 350 degrees F
2. Using a food processor, pulse everything together just until combined (mixing in the chocolate chips at the end so they don't get broken down)
3. Place spoonfuls of cookie batter on a parchment lined paper and bake in the oven for 18-20 minutes
4. Store any leftovers in an airtight container in the fridge (if you're even lucky to have any left!)
