*5 Ingredient Chocolate Blender Cupcakes
These cupcakes were so quick to make. I wanted to create something with very few ingredients that was still rich and moist in flavor and a nice treat at any time of day. The date paste did the trick, but I am going to try them again with banana and apple sauce to see the difference. These were a definite success and there is no fat at all! (Just omit the peanut butter in the frosting and you'really good to go!). I couldn't hold the boys back as I took them out of the oven. Yet, they patiently waited once they saw the chocolate frosting I had prepared to top them off with. This will be a recipe I will be making on a regular basis for sure!
Yield: 5-6 large muffins
You will need:
Cupcakes:
-1 cup oat flour
-1/3 cup carob/cocoa powder
-A dash of cinnamon (optional)
-1 tablespoon baking soda
-3/4 cup date paste
-2/3 cup coconut water/water/milk
Chocolate Peanut Butter Icing:
-1/2 cup date paste
-2 tablespoons raw carob/cocoa powder
-2 tablespoons peanut butter (optional)
-1-2 tablespoons water
Directions:
1. Preheat the oven to 350 degrees
2. Blend all the ingredients together for the cupcakes until combined
3. Scoop 2-3 large tablespoons for each cupcake in a lined muffin tray
4. Bake for 20-23 minutes and allow to cool on the side as you make the frosting
5. Mix all the ingredients for the frosting together and smear over top of the cupcakes once cooled down
6. Store the cupcakes in the fridge until ready to eat
