Chewy Caramel Oatmeal Cookies
I decided to whip up a batch of these cookies while sitting to watch a movie at 9:30 in the evening. They were so quick to make, that I was sitting back down to watch the test of the movie and munching on the warm and gooey cookies before 10pm! These cookies are so chewy and have a caramel flavour with the big chunks of dates. I can't wait for Julien and Zayn to wake up and see these cookies waiting for them in the kitchen! Yield: 9 large cookies
You will need:
-1 cup oats (I used steel cut oats)
-2 tablespoons chia seeds
-2 ripe bananas
-dash of cinnamon
-1/4 cup peanut butter (any nut/seed butter, or even chopped nuts)
-8 pitted medjool dates
Directions:
1. Preheat oven to 375 degrees
2. Using a food processor, mix all the ingredients together (except for the dates) until well combined
3. Add the dates at the end and mix enough so they stay chunky
4. Spoon the cookie batter onto a parchment lined baking sheet and flatten slightly with the back of the spoon
5. Bake the cookies for 10 minutes
6. Feel free to enjoy the cookies right out of the oven or allow them to cool
7. Store the cookies in an air-tight container the fridge
