*Carrot Pineapple Juice Pulp Bites

Growing up, I can remember always baking a carrot cake that had crushed pineapple in it. I was inspired to make these energy bites after juicing some carrots and pineapple (which were sitting in my fridge for a while and needed to be juiced). Instead of composting the pulp, I decided to create carrot cake bites inspired by the cake I had growing up. What a success!
Yield: depends on how much pulp you have
You will need:
-carrot pulp (or a combination of carrot and pineapple pulp like mine)
-dash of cinnamon
-6 pitted medjool dates for every cup of pulp
-2 tablespoons hemp seeds for every cup of pulp
Directions:
1. Using a food processor, mix everything together until combined
2. Roll the dough into balls and refrigerate
*feel free to add shredded coconut, but butters, any seeds of choice
*for a fancier look, roll the balls in shredded coconut
