Creamy Cheesy Alfredo Sauce

This sauce is one of the best sauces that could be poured over any pasta. Its is a definite crowd pleaser, vegan or not! Such simple ingredients combined to give a velvety sauce reminiscent of cheesy alfredo!
Yield : 3 cups of sauce
You will need:
-1/4 cup coconut oil*
-1/3 cup GF flour
-2-3 cups milk of choice(depending on how runny you would like your sauce)
-2 tablespoons tomato puree
-1 teaspoon garlic powder
-1 tablespoon lemon juice (or 1/2 tablespoon apple cider vinegar)
-1/2 cup nutritional yeast
-dash of salt (optional)
Directions:
1. Create a roux by melting the oil and slowly adding and whisking in all the flour. This will make somewhat of a thick roux as the base of your thickening agent to the sauce
2. Add in all the rest of the ingredients and allow to heat through on low, whciking throughout
3. It may not seem quite thick but as it cools, the sauce will get a little thicker
4. Pour this sauce over your choice of noodle. Feel free to add in any extra vegetables to the pasta!
*I would be interested in using pureed cauliflower as a thickener to see if I could make this sauce fat-free
*Try this sauce over zoodles for a pasta-free option
