Raw 6 Ingredient Nanaimo Bars

This is just too beautiful for words! It's hard to believe how easy it is to replicate such sugary desserts and to create something that is raw and composed of whole foods and pure goodness for the body. I recreated a famous dessert that I grew up having. I'll be honest though... this version is on point and you don't haveto feel so guilty indulging in 1 or 2 or 3.... pieces :)

Yield: 12 bars
You will need:
Crust:
-15 medjool dates (if too hard, soak in water for 10 min)
-1 cup shredded coconut
-1 1/2-2 tablespoons Cocoa (or carob powder)
-1 1/2 cup of any nut (I used a combination of hemp seeds and cashews)

Cream Layer:
-2 cups cashews (that have been soaking in water for a minimum of 4 hours)
-2 tablespoons Maple syrup

Chocolate Layer:
-3 tablespoons melted coconut oil
-1/4 cup cocoa
-2 tablespoons Maple syrup

Directions:
1. Process all the ingredients for the crust in a food processor and press into pan that's been lined with plastic wrap
2. Blend the cream layer ingredients in a high speed blender and spread over crust
3. Place in freezer to harden for 1 hour
4. Mix the ingredients for the chocolate layer over the cream layer and spread QUICKLY before the coconut oil hardens
5. Cut into desired size pieces and store in freezer

*Put some water on your fingertips when pressing in the crust to avoid sticky fingers
*If the chocolate layer is too thick, put it over some heat briefly to melt completely and pour over the cream
