Raw Carrot Salad
What's for brunch? A raw carrot cake or possibly a carrot salad? So refreshing and a wonderful way to embrace the summer! Pair it with a smoothie and you're set!
Yield: 1 serving
You will need:
-2-3 shredded carrots
-A dash of cinnamon
-2 tablespoons shredded coconut
-2 tablespoons raisins
-3 chopped dates
-2 tablespoons agave or maple syrup
-1 tablespoon chia seed
Directions:
Mix all the ingredients together and have it sit for at least 30 minutes so that the chia seeds have gelled a bit. Enjoy!
