Papaya Kiwi Quinoa Salad
Ever in the need of a delicious meal to take to a potluck? This salad is one of my go to salads that is always a hit with any gathering. I love the flavor of the dressing and the punch of flavor from the papaya seeds. They're very strong in flavour and a little goes a long way. I hope you enjoy this salad as much as me!
You will need:
Salad:
-2 cups cooked quinoa (cooled)
-1/2 papaya (chopped in small cubes)
-2 kiwis (cut in small cubes)
-1/2 cup chopped walnuts or pecans
Dressing:
-1/4 cup papaya seeds
-1/2 teaspoon mustard seed
-1 garlic clove
-Juice of 2 lemons
-1 tablespoon lemon rind
-1 teaspoon sweetener (maple syrup, agave, coconut sugar, etc)
-1 tablespoon coconut oil
Directions:
1. Mix all the salad ingredients and set aside in the fridge
2. Blend all the dressing ingredients together and pour over the salad
3. Let the salad sit in the fridge for at least 30 minutes to help the flavors soak in
