Oat Thumbprint Cookies

There's something about thumbprint cookies that is so appealing to me. I love them and they remind me of my childhood... So if I ever get a chance to replicate them with a healthier twist, I will! These turned out delish!

Yield: 10 Cookies
You will need:
-1 cup oat flour
-1 cup gluten free flour mix (almond flour will work too)
-3/4 cup hemp seeds
-A dash of cinnamon
-3 tablespoons coconut oil (about 1/4 cup)
-1/4 cup maple syrup
-1/4 cup date caramel (dates soaked in water and blended to make a caramel sauce)
-Filling: date caramel/chia jam/regular fruit jam
Directions:
1. Preheat oven to 350F
2. Using a food processor, mix all the ingredients together until it becomes like a dough
3. Roll into balls and place on a parchment lined cookie sheet
4. Press your thumb slightly in the middle of each cookie and place in the oven to bake for 20 minutes (until it starts to brown lightly on the bottom edge)
5. Remove from oven and turn off the oven. Place some date caramel in the middle of each thumbprint and place the tray back in the oven that has been shut off. Leave the tray in the oven for the filling to settle in the cookie with some of the oven heat for another 10-15 minutes
6. Allow cookies to cool before devouring them
