Simple Quinoa Porridge

I was craving some rice pudding, so I'm making a quick batch of quinoa porridge that really hits the spot and delivers all the flavour. You could be as creative as you would like with the mix-ins you choose. Enjoy!

Yield: About 2-3 servings
You will need:
-1 cup uncooked quinoa
-1 cup coconut milk (any milk)
-1 1/2 cup water
-A dash of cinnamon (or cinnamon bark)
-Mix-Ins: shredded coconut, maple syrup, raisins, cinnamon, grated Apple
Directions:
1. Cook the quinoa, milk, 1 cup of water and cinnamon in a pot with the lid on
2. Half way through cooking (about 10 minutes), remove the lid and add maple syrup, raisins, cinnamon, grated Apple, coconut and 1/2 cup water
3. Allow to simmer, uncovered, until the quinoa is fully cooked
