*Cinnamon Nicecream Cake With A Carrot Date Streusal

When I mske fresh carrot juice i'm left with the pulp and I don't like throwing it out... so my creativity kicks in and I try utilizing it in other recipes... Like this one! Cinnamon banana nicecream cake with a carrot and date streusal on top. Mmmm :)

Yield: 1 cake
You will need:
Streusal Topping:
-1 cup carrot pulp (shredded carrots will work fine too)
-8 pitted medjool dates
-A dash of cinnamon
Cake:
-8 ripe bananas
-A couple dashes of cinnamon
-1 teaspoon vanilla
Directions:
1. Blend all the ingredients together for the cake and pour into a lined cake dish (or a free form pan) and place in the freezer
2.  Using a food processor, blend all the ingredients for the streusal topping until combined and dough like
3. Once the cake is frozen, press down the streusal topping all over the top of the cake and enjoy a slice or the whole cake!
4. Store the cake in the freezer in an airtight container
