Raw Neopolitan Cake

I started off by making nicecream and then this ended up as a nicecream cake. I'm glad that I made this as a cake because I got to enjoy all the flavors of my childhood favorite icecream combos. Plus... this is essentially fat free! (Omit the coconut for a complete fat-free version)

Yield: 1 cake
You will need:
Crust:
-8-10 pitted medjool dates
-1/2 cup raisins
-1/2 cup shredded coconut
Chocolate Layer:
-6 frozen bananas
-2 tablespoons raw cocoa/carob
Strawberry Layer:
-2 cups frozen strawberries
-1/2-1 frozen banana
Vanilla Layer:
-6 frozen bananas
-1/2 teaspoon vanilla
Directions:
1. Line the bottom of a springform pan with parchment paper
2. Soak the dates and raisins in some water for 10 minutes
3. Drain them and save the watee
4. Using a food processor, blend the dates, raisins and coconut and press this mix on the bottom of the pan
5. Using a high speed blender (or the food processor), blend the chocolate layer ingredients together until smooth. Use some of the date water if needed to help the blending
6. Spread the chocolate layer over the crust and place in the freezer
7. Blend the ingredients for the strawberry layer and spread over the chocolate layer. Return to the freezer
8. Blend the ingredients for the vanilla layer and spread over the strawberry layer. Use some date water if needed to help the blending.
9. Sprinkle the top with a handful of shredded coconut if desired and return to the freezer for another 4-5 hours. Enjoy!
