Banana Blueberry Loaf
This was a quick loaf that I put together using a blender. I love creating simple, delicious desserts that can be whipped up with one gadget. It's hard to believe that these simple ingredients can create a luscious loaf with blueberries bursting with every bite. I think that the next time I whip up this loaf, I will be adding some lemon zest too, to give it a lemon blueberry flare! You will love this!
Yield: 1 loaf
You will need:
-1 cup oat flour (any choice of flour)
-1/2 teaspoon baking powder
-1/4 teaspoon baking soda
-pinch of salt
-1/4 teaspoon cinnamon
-3/4 cup mashed ripe bananas (about 2 1/2 bananas) - you can substitute the banana with apple sauce
-1/4 cup maple syrup
-1/4 cup coconut milk (any choice of milk)
-1/2 cup blueberries (thawed out if frozen)
Directions:
1. Preheat the oven to 350 degrees
2. Mix the first 5 ingredients together and set aside
3. Place the rest of the ingredients (except for the blueberries) in the blender and blend until smooth
4. Add the oat flour to the blender to combine with the rest of the ingredients and blend until combined (do not over blend)
5. Add the blueberries and stir them slightly with a spoon to prevent breaking them and turning the loaf purple
6. Pour the batter in a lined loaf pan and bake for 25 minutes
7. Once the baking time is done, turn off the oven for 10 minutes and keep the loaf in the oven
8. Remove the loaf and allow it to cool before slicing (or place it in the fridge over night to allow the flavors to intensify)
*Feel free to double the recipe for a taller loaf that can serve as a slice of bread with your morning cup of joe!
