Peanut Butter Coconut Cookies
These peanut butter cookies have a nice richness to them from the addition of coconut oil. I substituted the regular butter for coconut oil and it made a huge difference in texture and flavour. Try adding chocolate chips for a peanut butter chocolate combination. Don't be surprised if you end up eating them all (like me)!
