Raw Simple Cashew Cream Cheese

I had the pleasure of trying some raw cashew cheese from the Prana Yoga Fest at the Basic Roots stand. They were so lovely and I made such a personable connection with the owner. We had so much in common and shared many stories and then she gifted me with a few goodies. You can find their products throughout Calgary, including Community Natural Foods. My favorites have to be the Raw Fig Bars and the Herbes de Provence Raw Cashew Cheese and Cracker combo. This recipe is dedicated to Basic Roots and the wonderful team behind it 💙.
Yield: 2 cups cheese
You will need:
-1 1/2- 2 cups soaked cashews (soaking in water for at least 4 hours)
-2 garlic cloves
-2 tablespoons lemon juice
-1 heaping tablespoon Herbes de Provence (or spice of choice)
-A dash of Himalayan salt
-1/4 cup water
-1 capsule of probiotics (optional)
Directions:
Blend all the ingredients together until creamy and store in an airtight container in the fridge for up to 1 week
*Experiment with the flavors! Try sundried tomatoes, Italian seasoning, plain, maple cinnamon...
