Overnight Quinoa Pie Pudding

Wanting some pie... So I decided to prep some overnight quinoa with the exact flavours! 😊 Can't wait to eat you! Lol Yield: 2 generous breakfasts Yiu will need: -3/4 cup cooked quinoa -1/4 cup almond yogurt -1/2 cup water -1/4 cup almondmilk -A dash of cinnamon -1 tablespoon raisins -1/2 tablespoon shredded coconut - 1 small mashed banana -1/2 cup pumpkin purée/apple sauce -1/2 tablespoon carob -1/2 tablespoon chia seed -A dash of pumpkin spice/nutmeg Directions: Mix all the ingredients and place in fridge overnight. Enjoy in the morning!

Peanut Butter Oat Protein Cookies

These should be called "Power Cookies" because they're full of energy and yumminess. You can never go wrong with the combination of peanut butter and oats. Enjoy! Yield: 6 cookies (depends on how big you want them) You will need: -1 tablespoon flax/chia seed -3 tablespoons water -1 cup gluten-free oats -1 teaspoon baking soda -1/4 cup peanut/almond butter -1 ripe mashed banana -1/2 cup date caramel paste -1 teaspoon vanilla -1/4 cup cocoa nibs/chocolate chips -Optional Add-Ins: chopped nuts, coconut Directions: 1. Preheatoven to 375F and line baking pan with parchment paper 2. In a small bowl, mix the flax/chia seed with the water to become a gel consistency as your "egg" substitute (allow this to sit for at least 10 minutes) 3. Healthy carrot muffins that are delicious! πŸ‘Œ☺️ They're fat-free, sugar-free, dairy-free, gluten-free and guilt free! Great way to start off your morning or a quick on-the-go snack. Yield: 6 muffins You will need: -1 1/3 cup oat flour  -1/2 teaspoon baking soda   -1 teaspoon cinnamon  -1/4 cup coconut sugar  -2 mashed bananas  -2 teaspoons vanilla extract  -2 teaspoons white vinegar/apple cider vinegar -1 cup shredded carrots  -Optional: shredded coconut, chopped walnuts, chopped dates, raisins, seeds Directions: 1. Preheat oven to 350F and line muffin tins with liners  2. Mix all the dry ingredients together in a bowl 3. Add in the wet ingredients and stir until everything is combined 4. Pour batter into muffin tins and bake for 20-25 minutes. Allow to cool before eating *You can substitute apple sauce for the bananas 

Simple Quinoa Porridge

I was craving some rice pudding, so I'm making a quick batch of quinoa porridge that really hits the spot and delivers all the flavour. You could be as creative as you would like with the mix-ins you choose. Enjoy! Yield: About 2-3 servings You will need: -1 cup uncooked quinoa -1 cup coconut milk (any milk) -1 1/2 cup water -A dash of cinnamon (or cinnamon bark) -Mix-Ins: shredded coconut, maple syrup, raisins, cinnamon, grated Apple Directions: 1. Cook the quinoa, milk, 1 cup of water and cinnamon in a pot with the lid on 2. Half way through cooking (about 10 minutes), remove the lid and add maple syrup, raisins, cinnamon, grated Apple, coconut and 1/2 cup water 3. Allow to simmer, uncovered, until the quinoa is fully cooked

Banana Chocolate Marble Cake

I remember when I would be in the kitchen with my mom, helping with any chance she gave me to bake something yummy. One of my favorite things to make with her was any kind of cake. This recipe takes me back to those memories :). Love you mom! Yield: 1 cake loaf You will need: -3/4 cup gluten-free flour mix -1/3 cup sifted coconut flour -3/4 teaspoon baking soda -1/3 cup coconut sugar -2 tablespoons melted coconut oil -1 flax egg -3 ripe bananas  (mashed) -1/2 cup dairy free yogurt -1/4-1/3 cup coconut milk (only add if the cake mixture is too thick or dry) -1/4 cup vegan chocolate chips Directions: 1. Preheat oven to 350F and line a loaf pan with parchment paper 2. In one bowl, mix all the dry ingredients together and set aside 3. In another bowl, mix the wet ingredients together and slowly mix in to the dry mix (add coconut milk if needed) 4. Oh salad rolls, how I've missed you so 😒. It's been too long! Enjoyed these for lunch today. Summer flavours of mango and strawberry πŸ“ with my homemade dipping sauce that is to die for. Enjoy! Yield: 12 rolls You will need: -12 rice papers -2 cups cooked rice noodles -2 cups chopped lettuce -2 shredded carrots -2 small cucumbers (sliced very thin lengthwise) -1 cup fresh mint/basil leaves -1-2 mangos (sliced long and thin) -1 avocado, sliced long and thin Dipping Sauce: -3 tablespoons Tahini -1 tablespoon maple syrup/coconut sugar -Juice of 1 lemon/lime -1 tablespoon soy sauce -1 teaspoon Sriracha Directions: 1. Have all the filling ingredients for the salad rolls ready and in separate bowls 2. Wet each rice paper in hot water to soften and lay on a cloth that is damp with water 3. Layer your filling ingredients in the middle of the rice paper (rice noodles, lettuce, carrots, cucumber, avocado, mint leaves, mango, strawberries) 4. Roll each rice paper

Breakfast time! 😊 Instead of coffee... Try this for a change! The matcha helps gives you a morning boost. Love this! Yield: 1 serving You will need: -5 frozen bananas -1 heaping tablespoon of matcha green tea powder -1/2-1 cup coconut water (enough to make it a smoothie consistency) - A handful of dried mulberries - A sprinkle of shredded coconut Directions: Blend all the ingredients together and top with the mulberries and shredded coconut. I scream, you scream, we all scream for PEANUT BUTTER NICECREAM! Honestly, some of the most simplest recipes can be the most satisfying! This peanut butter nicecream can be eaten at any time of the day (well at least I eat it at any time of the day!) and is so satisfying. I hope you enjoy! Yield: 1 serving You will need: -6 frozen Bananas -2 tablespoons of Nut Butter -1-2 pitted Medjool Dates Directions: Blend all the ingredients together and eat immediately *Remove bananas from freezer for a few minutes to help with the blending *Add anything you desire (I added chia seed and raw brownies)

I went to make a peanut butter smoothie bowl and saw the berries just screaming at me... So I had to create this bowl of pure goodness. Honestly, you can make a smoothie bowl with whatever you like and you won't be disappointed. I hope you enjoy! Yield: 1 serving You will need: -2 frozen bananas -1 cup frozen strawberries -1/2 cup frozen blueberries -1/2 cup frozen cherries -1 cup spinach -Toppings: date caramel, pumpkin seeds, rawnola, cocoa nibs, coconut chips, carob bliss balls Directions: Blend all the ingredients together and top with your favorite toppings! *Add 2 tablespoons of milk or water to help with blending if needed

To celebrate summer and all its warmth, I present to you a mango berry smoothie bowl that's finger licking good! Enjoy! Yield: 1 serving You will need: Mango: -1 frozen banana -1 cup frozen mango chunks -1-2 tablespoons fresh apple juice Berry: -1 frozen Banana -1 1/2 cup frozen strawberries -1-2 tablespoons fresh apple juice Toppings: blueberries, strawberries, mango, rawnola Directions: Blend each flavour separately and arrange in your bowl however you desire. We were heading on the road to BC and I wanted to enjoy something on the road for breakfast so I created this amazing meal. I couldn't believe how much it tasted like soft serve icecream and I had to keep reminding myself of the ingredients so I didn't feel so bad lol. I love the simplicity of nicecream! Yield: 1 serving You will need: -4 frozen bananas -2 tablespoons peanut butter -A dash of cinnamon -1/2 cup chai soy milk (or milk mixed with chai spice) -Enough water to help the blender -Toppings: cocoa nibs, shredded coconut Directions: Blend all the ingredients together and top with your favorite toppings

**Mint Nicecream With A Minty Nut Rawnola

So.... this just happened! I'm loving the minty flavour combination in my nicecream lately. Especially with the nuttype texture of the Rawnola on top. I don't think my breakfasts can get any better than this! Enjoy! Yield: 1 serving You will need: -4-5 frozen bananas -6 mint leaves (dried mint could work too) -Toppings: minty nut rawnola (pulse 8 pitted dates, 1/4 teaspoon peppermint extract or fresh mint, 3 tablespoons walnuts, 1 tablespoon cocoa) Directions: Blend all the ingredients together and top with the minty nut rawnola. I must admit that it was pretty hard devoting this beauty. When something is so pretty I just want to stare at it! Lol. This Rainbow bowl is filled with so much goodness for your health and tastebuds... I give it a two thumbs up! One of the simplest breakfasts I often make is nicecream (if I haven't said that enough already). It's so simple and so good for your digestion. Make sure that your bananas are spotty and ripe! Yield: 1 serving You will need: -8 frozen bananas -2 tablespoons carob -Toppings: banana slices Directions: Blend all the ingredients together and top with your favorite toppings. Enjoy!

*Vanilla Bean Nicecream

When you have those ripe bananas just staring at you... Freeze them overnight and make yourself a generous smoothie bowl for breakfast! It's one of the laziest meals I can ever prepare because it's only 2 ingredients (and mess free!). I am going to admit it... I ate this right out of the blender! πŸ™ˆ Yield: 1 serving You will need: -6 frozen bananas -1 sprig of vanilla bean- with the vanilla bean removed from the inside (or vanilla extract) Directions: Blend all the ingredients together and enjoy on its own or top with your favorite toppings!

Breakfast calls for some banana nicecream with a "butterscotch" drizzle made of persimmons and dates. Zayn gave it a 2πŸ‘πŸ‘ Breakfast=3ingredients! Can't complain! Yield: 1 serving You will need: -6-7 frozen bananas -3-4 ripe persimmons -4-6 pitted dates  (that have been soaking for a couple of hours) Directions: 1. Blend the dates and persimmons together to make the sauce and place in an airtight container in the fridge until ready to use 2. Blend the bananas together to make your nicecream and top with the sauce. Enjoy!

Easiest and healthiest peanut butter cookies you will ever make!  Only 7 simple ingredients... and you won't be able to stop eating them (that's a warning!). For all you peanut butter lovers out there... Enjoy! Yield: 6 cookies (depends on what size eyou would like) You will need: -1 flax egg -1/2 teaspoon baking soda -1/4 cup coconut sugar -A dash of cinnamon -1 teaspoon vanilla -1 cup peanut/almond butter -1/4 cup chocolate chips Directions: 1. Preheat oven to 350F and line a baking sheet with parchment paper 2. Mix all the ingredients together and drop cookies onto baking sheet 3. Bake for 8 minutes  (no longer because they will set once they are out of the oven) 4. Allow to cool and store in an airtight container in the fridge or freezer. Enjoy!

I just found out that we have some raspberry bushes around our house! It's so neat to see something that I'm always buying from the store growing right out of my garden. I tried some of them and noticed that they had more of a crunch with the seeds and we're quite tart. I'm so excited to pick some more once they are bigger and more ripe! Yield: 1 serving You will need: -4 frozen bananas -2 cups frozen raspberries -Optional: a dash of vanilla Directions: Blend all the ingredients together and enjoy!

*Cinnamon Nicecream Cake With A Carrot Date Streusal

When I mske fresh carrot juice i'm left with the pulp and I don't like throwing it out... so my creativity kicks in and I try utilizing it in other recipes... Like this one! Cinnamon banana nicecream cake with a carrot and date streusal on top. Mmmm :) Yield: 1 cake You will need: Streusal Topping: -1 cup carrot pulp (shredded carrots will work fine too) -8 pitted medjool dates -A dash of cinnamon Cake: -8 ripe bananas -A couple dashes of cinnamon -1 teaspoon vanilla Directions: 1. Blend all the ingredients together for the cake and pour into a lined cake dish (or a free form pan) and place in the freezer 2.  Using a food processor, blend all the ingredients for the streusal topping until combined and dough like 3. Once the cake is frozen, press down the streusal topping all over the top of the cake and enjoy a slice or the whole cake! 4. Store the cake in the freezer in an airtight container

*Layers Of Mint Nicecream

What's for breakfast?? Some mint nicecream with layers of a berry flax jelly in between (being Lebanese, I have a lifetime supply of dried mint! πŸ™ˆ). Mmm... Happy Sunday everyone! Yield: 1 serving You will need: Nicecream: -4-6 frozen bananas -1 tablespoon dried/fresh mint Berry Flax Jelly: -2 tablespoons ground flax seed -4 tablespoons water -1/2 cup mixed frozen berries Directions: 1. Mix the ingredients for the jelly together for the flax seeds to absorb the moisture and become a gel 2. In a blender, combine the bananas and mint until nicecream is formed 3. Layer the nicecream and jelly in a large cup or spoon the jelly over a the nicecream as a smoothie bowl. Enjoy!

I haven't touched the matcha in forever while being pregnant because of the caffeine... but OH MAN! Have I missed you so! 🍌🍌🍌🍌 Get your fruit on! Yield: 1 serving You will need: -4-6 frozen bananas -1 tablespoon matcha green tea powder (you can adjust this amount to your liking) -Toppings: rawnola, date caramel sauce Directions: Blend all the ingredients together and top with your favorite toppings!

Raw Neopolitan Cake

I started off by making nicecream and then this ended up as a nicecream cake. I'm glad that I made this as a cake because I got to enjoy all the flavors of my childhood favorite icecream combos. Plus... this is essentially fat free! (Omit the coconut for a complete fat-free version) Yield: 1 cake You will need: Crust: -8-10 pitted medjool dates -1/2 cup raisins -1/2 cup shredded coconut Chocolate Layer: -6 frozen bananas -2 tablespoons raw cocoa/carob Strawberry Layer: -2 cups frozen strawberries -1/2-1 frozen banana Vanilla Layer: -6 frozen bananas -1/2 teaspoon vanilla Directions: 1. Line the bottom of a springform pan with parchment paper 2. Soak the dates and raisins in some water for 10 minutes 3. Drain them and save the watee 4. Using a food processor, blend the dates, raisins and coconut and press this mix on the bottom of the pan 5. Using a high speed blender (or the food processor), blend the chocolate layer ingredients together until smooth. Use so

OMG... This just happened πŸ™ˆ. Breakfast Is Served! Made myself some 1 ingredient nana nicecream with a 3 ingredient berry date sauce ❤️. A bowl of amazingness to wake up to 🌞. Yield: 1 serving You will need: -6-8 frozen bananas Berry Sauce: -1 cup blueberries -1 cup strawberries -1 cup pitted dates  (soaking in water for a couple hours) Directions: 1. Blend all the ingredients for the berry sauce together. If it is too thick, add in a little of the date water to thin out 2. Store the sauce in an airtight container and keep in the fridge. 3. Blend the bananas and pour into your bowl of choice and top with as much berry sauce as you'd like! *For the berry sauce, I used a bottle that is used to store condiments in, like ketchup, for easy squeezing and decorating *This sauce is great for additions to oatmeal, Pancakes, yogurt, etc.
