*2 Ingredient Peanut Butter Date Bites

2 ingredients for these energy bites? Don't mind if I do! Simplicity in the kitchen with loads of flavors! I love dates and I love peanut butter so put them together and you have a perfect marriage! Yield: 4-5 balls You will need: -1 cup dates -1-2 tablespoons peanut butter (any butter) Directions: 1. Using a food processor, blend everything together into a dough 2. Roll the dough into balls 3. Enjoy as is or store in an airtight container in the fridge/freezer *You can dip these balls in melted chocolate or even roll them in shredded coconut!

I love throwing a few ingredients into a food processor for a quick snack on the go. In this case, it was 4 ingredients and they combined wonderfully! I hope you enjoy these as much as we did! Yield: 6-8 balls You will need: -1 cup oat flour -3/4 cup peanut butter -2 tablespoons date paste (any seeetener) -2 tablespoons raw cocoa/carob powder Directions: 1. Using a food processor, mix all the ingredients together until a dough forms 2. Roll into balls and store in an airtight container in the fridge or freezer

I love decorating my smoothie bowls with these little gems. I swear... you can make any energy ball you like with dates on hand. I usually use cocoa in these but thought I'd try some carob for a change. They remind me of the Eatmore chocolate bar. Zayn kept eating them as I rolled them, so this is what was left 😅. Enjoy! Yield: 2 cups of mini energy balls You will need: -8 pitted medjool dates -1 cup dried mulberries -3/4 cup hemp seeds -1 tablespoon maple syrup -2 tablespoons raw carob powder -A dash of cinnamon (optional) Directions: 1. Process all the ingredients together in a food processor until dough-like consistency forms 2. Roll into balls of any size 3. Store in airtight container in fridge *Wet hands lightly when rolling to help with the stickyness

**Carob Surprise Truffles

I love simplicity in the kitchen, and when I'm reaching to get only 4 ingredients from my pantry, I sense that a tasty recipe is coming my way. These carob balls are so on point that you'll be wanting to make them again and freeze them for other moments that you may crave them. You could easily change the carob to cocoa in this recipe and they'll still be as tasty. Yield: 12 balls You will need: -1cups pitted dates -1-1 1/2 tablespoons carob -1 cup almonds -12 grapes (optional) Directions: 1. Blend all the ingredients in a food processor until dough forms 2. Roll into balls or roll around grape 3. Store in air tight container or in fridge if using grapes *Wet hands to help with stickiness when rolling

*Peanut Butter and Jam Oat Bites

Who didn't grow up enjoying the wonderful combination of peanut butter and jam? I wanted to make a simple snack on the go that was inspired by these classic flavors and I believe it was a definite success! Yield: 24 balls You will need: -2 cups rolled oats/steel cut oats -1 cup peanut butter -1/2 cup dehydrated strawberries (you can use any dried fruit here if you don't have dehydrated strawberries) -4 tablespoons maple syrup/date paste -A dash of cinnamon (optional) Directions: 1. Using a food processor, mix all the ingredients together until it combines into a dough 2. Roll the balls out into desired size balls 3. Eat as is or store in an airtight container in the fridge/freezer

*Almond Date Grape Bombs

After making almond milk, I used the pulp in these little gems 😊. Do not ever throw out the pulp! You could add it to smoothies, dehydrate it for an added crunch on smoothie bowls, and so much more! I loved the crunch and burst with the grape surprise in these. Yield: 12 grape bombs You will need: -1 cup dried mulberries -1 cup pitted dates -1 tablespoon raw carob powder -1 cup almond pulp (you can dehydrate the pulp beforehand or keep as is, but you will notice a difference in flavour) -12-15 grapes Directions: 1. Using a food processor, mix all the ingredients together  (except for the grapes) until a dough-like consistency is reached 2. Roll the dough into balls around each grape 3. Store in an airtight container in the fridge and eat within a day or two because of the moisture from the grapes

*Peanut Butter Banana Chocolate Cups

Homemade banana peanut butter cups made by moi ☺️. These are so good... I had to share! Such a healthier, yet still tasty, version of the peanut butter cups I grew up eating. Enjoy! Yield: 8 peanut butter cups You will need: -1/4 cup cocoa -1/4 cup melted coconut oil -2-3 tablespoons Maple syrup -1 mashed banana -2 tablespoons peanut butter -Optional: a dash of cinnamon Directions: 1. Line a mini cupcake pan with cupcake liners 2. Mix the cocoa, coconut oil and maple syrup together until smooth 3. Place 1 tablespoon of the chocolate sauce in the bottom of each cupcake liner and place the pan in the freezer for the chocolate to harden 4. In the meantime, mix the banana, peanut butter and cinnamon together until smooth 5. Remove the pan from the freezer and scoop 1 tablespoon of the banana peanut butter mix over the chocolate base 6. Scoop another tablespoon of the chocolate sauce over the banana peanut butter layer and return to the freezer to harden 7. Once they have

*Simple Peanut Butter Fudge

This delicious fudge can be eaten right out of the blender! It's everything your heart can ever desire. A velvety peanut butter that just melts in your mouth. I added a little crunch with some cocoa nibs and I can't wait to make them again! Yield: 12-15 fudge squares You will need: -2 ripe bananas -1 cup runny peanut butter (heat the peanut butter slightly to make it a little runny if needed) -2 tablespoons date paste/maple syrup -2 tablespoons melted coconut oil -2 tablespoons cocoa nibs/chocolate chipso Directions: 1. Blend all the ingredients together until creamy, pulsing in the cocoa nibs at the end just so they do not get broken down completely 2. Pour the fudge into icecube trays/molds and freeze until hard enough to remove from the molds 3. Store the fudge in the freezer to avoid from getting too soft

*Pina Colada Smoothie

This smoothie right here takes me back to the beach and all the sunshine. I love pineapple and when I get to utilize it in a smoothie, there is no hesitation. I hope you enjoy this one as much as Zayn and I did! Yield: 1 serving You will need: -1/4 pineapple -2 frozen bananas -1 handful of spinach -1/4 cup coconut meat -1 cup coconut milk (any milk) Directions: Blend all the ingredients together and enjoy!

*Strawberry Carob Smoothie

Don't judge a book by its' cover?... Don't judge a smoothie by its' color! Sometimes the most ugliest colored smoothies pack the most punch in flavor :) Kinda like this one... Yield: 1 serving You will need: -3 frozen bananas -1 cup frozen strawberries -2 handfuls of spinach -1 tablespoon carob powder -1/2 tablespoon shredded coconut Directions : Blend all the ingredients together and top with your favorite toppings!

*Chocolate Banana Oat Bars

Banana oat bars with a drizzle of peanut butter for my little monkeys, Zayn and Julien (and for me of course!). Yield: 14-16 bars (depends how you slice them) You will need: -4-6 mashed ripe bananas -1 heaping tablespoon of cocoa/carob -A dash of cinnamon -2 cups gluten-free oats Directions: 1. Preheat oven to 350F and line baking pan with parchment paper 2. Mix all the ingredients together and spread into the lined pan 3. Bake for 35-40 minutes (until baked through) and allow to cool once out of the oven 4. Store in the fridge in an airtight container *You can add whatever you like to this recipe  (I added 1 tablespoon chia seeds and drizzled peanut butter on top) *Add-In ideas: chocolate chips, cocoa nibs, berries, coconut, raisins, nuts, seeds, peanut butter, dried fruit, etc.

*Mango Chia Pudding

Chia pudding is one of the easiest things to prepare the night before. I love how you can add different fruits each time and it's a total different experience. I used mango in this concoction and was pretty happy with the result. Top it over anything you like or just eat it as is! Yield: 1 serving You will need: -1 1/2 mango (pitted and peeled) -1/2 banana -1/4 cup chia and ground flax seed combined -1 pitted date -1 1/2 tablespoon shredded coconut Directions: Blend all the ingredients together and place in an airtight container in the fridge overnight. Enjoy in the morning!

*Friendly Banana Mash

You can never be too old for a silly and playful lunch ☺️. This is a great dish to throw together when you're pressed for time or when you have many spotted bananas and you need to eat them up! These are also some of my favorite flavours combined. I hope you enjoy! Yield: 1 serving You will need: -6 mashed ripe bananas -Toppings: peanutbutter, date caramel -2-3 celery stalks Directions: Mash the bananas and top with your favorite toppings *I enjoy scooping up the mash with the celery sticks

*Crunchy Banana Whip

Sometimes the best foods can be so satisfying. I bought a case of bananas and have been on a banana kick this past week. Here I'm enjoying a simple bowl of banana whip that you can top with any goodies you like. I love the crunchy textures! Yield: 1 serving You will need: -5-6 bananas -A dash of cinnamon -Toppings of choice (I used coconut, dried mulberries, raisins, hemp seeds, flax seeds, walnuts) Directions: Blend the bananas and cinnamon together and top with your toppings. Eat immediately!
