Apple Peanut Butter Smoothie Bowl

One of my ultimate favorite snacks has to be apples with peanut butter. It's my medicine when I'm feeling down or when I just want something to snack on. I thought I'd add my apples to peanut butter nicecream today... I enjoyed the crunchy texture as Zayn and I gobbled this creation down in minutes 😊. Enjoy! Yield: 1 serving You will need: -4 frozen bananas -1 tablespoons peanut butter -A dash of cinnamon -Toppings: apple slices, rawnola, raw chocolate fudge, date caramel, peanut butter (I used peanut flour) Directions: Blend all the ingredients together and top with your favorite toppings! *If your peanut butter is too thick, add a little water to it and heat slightly

Pumpkin Quinoa Crisp

There's something about crumbles and apple crisps that just fill my heart with warmth. I think it's all the cinnamony flavours that remind me of fall. I wanted to create something just as warm but not as buttery and I think I was quite successful! I hope you enjoy! Yield: 1 serving You will need: -3/4 cup almond milk (any milk can work) -1/4 cup pumpkin purée  -1/4 cup raw quinoa -1/2 tablespoon maple syrup -1 teaspoon coconut oil -1/4 teaspoon vanilla -1/4 teaspoon nutmeg -1/2 teaspoon cinnamon Crumble Topping: -1 tablespoon melted coconut oil -1/2 teaspoon maple syrup -1 tablespoon oat flour -1/2 teaspoon quinoa flakes -1/4 cup chopped walnuts Directions: 1. Preheat oven to 350F 2. Lightly oil a small casserole dish  3. Mix together all the ingredients and place in the dish. Place a cover over the casserole dish and bake for 30 minutes 4. Raw Neopolitan Nicecream Cake

This cake was too beautiful to eat. I grew up having my mom buy a tub of Neopolitan icecream every week. It was not the healthiest kind but it was definitely the inspiration behind this guilt-free cake. I hope you enjoy it as much as I have! Yield: 1 cake You will need: Crust: -1/2 cup pitted dates (soaking for at least 10 minutes) -1/4 cup walnuts (any nut) -1/4 cup shredded coconut -A dash of cinnamon (optional) Pink Layer: -1/2 cup frozen raspberries -1/2 cup coconut milk -1 tablespoon coconut oil White Layer: -2 bananas -1 tablespoons coconut oil Directions: 1. Process the crust ingredients and press into lined pan 2. Blend the pink layer ingredients together and spread over crust. Place in the freezer to harden 3. Blend the white layer ingredients together and spread over the pink layer. Place in the freezer to harden. Slice and enjoy!

Citrus Quinoa Salad

A refreshing quinoa salad ready for dinner. Honestly, I think this is my favorite combination so far! Lol... I think I say that for everything (Hass reminds me every time by asking "Really? I thought the other salad was your favorite? And the one before that?") Yield: Enough for dinner You will need: -2 cups cooked quinoa (cooled down) -1 cup chopped cherry tomatoes -2 sprigs of green onion -1-2 shredded carrots -1/4 cup chopped red onion -2 diced up celery stalks -1/2 cup sliced mushrooms - 1 1/2 sliced up orange Dressing: -2-3 tablespoons tahini -Juice from 1 lemon -A dash of water Directions: 1. Mix all the dressing ingredients and place in fridge. The longer it sits in ten fridge, the thicker it gets. Add water to thin it out when ready to mix into salad 2. Mix all the salad ingredients together and pour dressing over once ready to eat

Peanut Butter Overload Nicecream and Chia Pudding

It's so funny how Zayn has to be my taste tester for all these delicious smoothie bowls. This one was given two thumbs up. On a side note... every morning when Zayn has a bath and gets dressed, I tell him to look at his outfit in the mirror and he says, "DAMN! I LOOK GOOD!" Lol 😅 These are those moments when I need to pinch myself and ask, "Is this for real? Am I blessed that much to have such amazing boys?!" 💙 Yield: 1 serving You will need: -3 frozen bananas -2 tablespoons peanut butter -1-2 tablespoons cashew milk  (any milk or water) -Toppings: rawnola, raw peanut butter chocolate fudge -1 cup of Chia Pudding Directions: Blend all the ingredients for the nicecream and top with your favorite toppings *For the chia pudding, I make a large batch at the start of the week with 2/3 cup chia seeds, 3 cups coconut milk (any milk), and 3 tablespoons date caramel (any sweetener)

Little Chocolate Quinoa Cake

Attempted a little chocolate quinoa cake... Oh my, looks delish... and so cute! Can't wait to eat you now :) Enjoy it with iceream too! Yield: 1 serving You will need: -1/2 cup quinoa flakes -1/4 mashed ripe avocado -flax egg (1 tablespoon  ground flax seed mixed with 3 tablespoons of water for at least 5 minutes) -6 chopped almonds -1 tablespoon cocoa -1 tablespoon chia seeds -1 handful vegan chocolate chips -1 tablespoon maple syrup Directions: 1. Preheat oven to 375F 2. Mix all the ingredients together and place in a greased ramekin 3. Place in the oven for 20 minutes (*do not over bake. Once the cake starts to remove from side of ramekin, it is done baking) 4. Eat it as is or top with your favorite toppings. Enjoy!

Leftover Dragon Fruit Salad

Good morning! Breakfast and lunch... A little overboard on the fruit lol 😊 I love putting together a fruit salad with all the random fruits I have in my fridge... Especially when they're really ripe. This one here included some dragon fruit 👌 Yield: Enough for lunch You will need: -1 chopped dragonfruit -2chopped kiwis -2 chopped nectarines -1 cup sliced grapes -1 cup chopped papaya -2-3 stalks of celery (chopped) -1 handful of raisins -A dash of cinnamon -1 tablespoon of ground flax seed Directions: Mix all the ingredients together and place in the fridge to allow flavors to settle. Enjoy!

Black Bean Brownie

I keep on seeing black bean brownie recipes and wanted to see if I could attempt one with a little less sugar and fat. I made this batch and I found that they tasted even better the next day, after sitting in the fridge. Mmmmmm Chocolate :) Yield: 1 8"x8" tray of brownies You will need: -flax egg (mix 1 1/2 tablespoons ground flax seed with 3 1/2 tablespoons of water and let it sit for at least 5 minutes) -1 can rinsed black beans -3 tablespoons melted coconut oil -9 pitted medjool dates (soaked in 3 tablespoons of hot water, which will also be used in this recipe) -4 Tablespoons Cocoa -1/2 tablespoon baking powder -A dash of vanilla -1/4 cup vegan chocolate chips Directions: 1. Preheat the oven to 350F 2. Blend all the ingredients together  (except for the chocolate chips) 3. Place batter in a parchment lined tray and sprinkle chocolate chips over top 4. Bake for 30-35min. Blueberry Nicecream Parfait

Today's weather has felt like 4 seasons in 1 day 😣. As I am writing this the sun is peaking through and the rain has stopped. This calls for some nicecream... More like a nicecream parfait of yummy, delicious layers to go well with the sunshine. Yield: 1 serving You will need: -3 frozen bananas -1 1/4 cup frozen blueberries -Layers: chia pudding and blueberries -Toppings: raw fudge and coconut chips Directions: 1. Blend the bananas until nicecream forms 2. Scoop out some of the nicecream into jar or cup, leaving about 1/4 cup of the nicecream in the blender 3. Pour 1/4 cup blueberries over the banana nicecream in the jar and scoop some chia pudding over top 4. Add 1 cup of the frozen blueberries to the nicecream that was left in the blender and blend to make a blueberry nicecream 5. Scoop the blueberry nicecream over the layers and top with your favorite toppings *You can use anything for the layers in between

Fruity Overnight Oats

Breakfast is served! OMG is all I can say! It's like heaven on a plate. You can top overnight oats with any fruits and be fully satisfied. Be as creative as you want! Enjoy! Yield: 1 serving You will need: -1/4 cup oat flour -2 tablespoons chia seed -3/4 cup water -1/4 cup chai soy milk (any milk) -A dash of cinnamon -Toppings: chia jam, sliced fruit (1/2 banana, 1/2 grated Apple, 2 strawberries), rawnola (a mix of sesame seeds, hemp seeds, flax seeds, coconut, raisins, carob) Directions: Place all the ingredients in a container (except for the toppings) and shake with the lid on. Place in the fridge overnight and top with your favorite toppings in the morning.

Butternut Squash Pie

I present to you a dessert that was well worth the wait! It smells like autumn in my house... yet it's summer?! I love these flavours and I don't mind having them at any time of the year! I bet you can try this with sweet potato or pumpkin too! Yield: 1 pie Crust: -1/2 cup oat flour -1/4 cup quinoa flakes -2/3 cup almonds (any nut) -2 tablespoons almond milk (any milk) -2 tablespoons coconut oil -3 tablespoons water Filling: -1/2 butternut squash -1 teaspoon cinnamon -A dash of nutmeg -1 tablespoon tapioca starch -1 teaspoon ginger -1 teapoon flour (I used quinoa flower) -5 pitted dates -1/4 cup almond milk  (any milk) -2 tablespoons coconut oil Directions: 1. Cut the squash in half and scoop out the inside 2. Place the cut side down in a casserole dish that is filled with 1/2 inch of water 3. Place the squash in the oven at 425 for about 45 minutes (until soft enough to scoop out).  When finished, set aside to cool and lower the temperature to 350F 4.

Chocolate Blueberry Energy Bars

Chocolate blueberry energy bars made by moi! 😊👍 Nice twist on nuts and seeds. I love yummy and different snacks that I can have on the go. I also love playing around with different textures. I hope you enjoy! Yield: 1 tray -1 cup pitted dates  (soaking for 10 minutes if hard) -1/4 cup hemp seed -1/4 cup walnuts  (any nuts) -1/4 cup ground flax seed -2-3 tablespoons Cocoa -3/4 cup blueberries -1 tablespoon lemon juice -1/2 teaspoon lemon rind -1 tablespoon tahini -1/2 cup sprouted grain (optional) Directions: Blend all the ingredients together and place in plastic wrap lined pan and place in freezer until hard enough to slice. Keep stored in freezer until ready to eat.

No Crust Pumpkin Pie With Coconut Whip

I love the flavors of fall and that includes pumpkin in all its' forms! This is a pumpkin pie that has no crust but has all the flavor and is more like a pudding consistency. I paired it with coconut whip but you could easily have it on its own or with a scoop of vanilla icecream. Enjoy! Yield: 1 pie You will need: Pumpkin Pie: -1 1/2-2 cups pumpkin purée -1 teaspoon baking powder -A dash of cinnamon and pumpkin spice -1/4 cup flour -1/2 cup milk -1/2 tablespoon ground flax -1 teaspoon vanilla -1/2 tablespoon maple syrup Coconut Whip Cream: -1 can full fat coconut milk -1 teaspoon vanilla Directions: 1. Open can of coconut milk and place in fridge overnight. You will see that the fat content rises to the top. In the morning, scoop out the coconut fat and place in bowl with vanilla. Beat it with a hand/electric mixer until peaks form. Store in fridge or freezer in airtight container until ready to use. 2. Preheat oven to 400F 3.  Mix all the ingredients togethe

After a nice run outside, I get to have my nutty soft serve icecream... I mean, who could say no to icecream for breakfast! Join me please so we can enjoy this together :) Yield: 1 serving You will need: -4 frozen bananas -2 tablespoons peanut butter -Toppings: chopped walnuts, 1 tablespoon cocoa nibs Directions: Blend all the ingredients together and top with the toppings. Raw Carrot Cake "Cheese" Cake

Attempted a raw carrot cake cheesecake that started yesterday and finished today. Cheese was made with cashews. I give this a 2 thumbs up! 👍👍 hehe 😊 Yield: 1 cake  Cheese: -1 1/4 cup cashews (soaking in water for a minimum of 4 hours) -1/2 cup coconut milk -Juice of half a lemon -A splash of vanilla -1/4 cup shredded coconut Carrot Crust: -1/2 cup dates -1/2 cup raisins -5 dried apricots -A dash of cinnamon, all spice and nutmeg -5 shredded carrots -5 chopped walnuts -1/4 cup shredded coconut Directions: 1. Blend all the cheese ingredients in a high speed blender and have it sit in a cheese cloth until the moisture is released 2. Blend the carrot mix in a food processor and press into a plastic wrap lined pan 3. Spread the cheese mixture over top and place in freezer for at least 40 minutes to set. Enjoy!

Purple and Green Fruit Salad

Such a satisfying salad. I love when I create a salad from leftover fruit in my fridge. It gets my creative juices flowing and then it turns out to be such a flavorful experience. I love having fruit salads for lunch because it's an easy and filling meal to put together. Yield: 1 serving You will need: -4-5 diced up kiwis -3 stalks of celery (diced up) -2 cups cut up purple grapes -1 tablespoon chia seed -A dash of cinnamon -1/4 cup coconut water Directions: Mix all the ingredients together and place in fridge for at least 30 minutes before enjoying

Carrot cake smoothie for breakfast 😊. So yummy! Especially if you're a carrot cake lover like me. You can make many variations of this recipe by creating a cashew cream to mimic cream cheese icing and also add pineapple for some extra juicy tropical flavors. Enjoy! Yield: 1 serving You will need: -3 shredded carrots -2 frozen bananas -2 tablespoons date pumpkin jam (or 2 pitted dates) -1 tablespoon chia seeds -2 tablespoons oat flour -1 cup almond milk (any milk) -1/2 cup ice - A dash of vanilla, cinnamon, nutmeg Directions: Blend all the ingredients together and enjoy!

Layered RGBW Smoothie

Good morning! Starting my Monday morning off with a layered smoothie (Red, Green, Blue, White) 😊👌👍👍 So yummy! You could be as creative as you want with layers of any fruits you have in your fridge. (Had to put something healthier in a slurpee cup) Yield: 1 serving You will need: -3 frozen bananas -A dash of cinnamon -1 cup blueberry chia jam (blend 3 tablespoons of chia seed with 2 cups of blueberries and place in fridge overnight to thicken) -1 cup sliced strawberries -1 cup sliced grapes Directions: 1. Make the blueberry chia jam 2. Blend bananas and cinnamon in a blender and set aside 3. Layer the nicecream, fruit and chia jam in a tall glass and enjoy!

Peanut Butter Banana Oat Cookies

When I have so many ripe bananas, I like to freeze them and also make some Banana Oat Cookies. These are some of the easiest cookies to make and are a weekly staple in our household. Such a tasty and healthy snack or meal on the go. You can flavour them differently every time. Enjoy! Yield: 24 cookies You will need: -6 ripe bananas -4-5 cups of Oats -Add-ins: cinnamon, raisins, peanut butter  (you can add in chocolate chips, coconut, dried Cranberries, etc.) Directions: 1. Preheat oven to 375F 2. Mash the bananas and stir all the other ingredients 3. Spoon onto lined baking sheets and place in oven for 20-25 minutes (until edges start to brown) 4. Enjoy right away or cool down and eat. Store in the fridge

Green Peanut Butter Smoothie Bowl

I love peanut butter and I love bananas... So why not have them in a smoothie bowl?! Boost up the nutritional value by adding in some spinach and you've got yourself a winner :) Enjoy! Yield: 1 serving You will need: -4-5 frozen bananas -2 tablespoons peanut butter (I used peanut flower) -1 cup spinach -3-4 pitted dates -Toppings: banana, rawnola, raw peanut butter fudge Directions: Blend all the ingredients together and pulse in the dates towards the end to keep chunky and chewy. Top with your favorite toppings and enjoy!

Pumpkin Mint Tarts

Made some mint chocolate bites. All I can say is that they're very tasty and remind me of a peppermint patty! A great snack on the go too! Enjoy! Yield:4 mini tarts You will need: Crust: -3/4 cup walnuts -3/4 cup pitted dates (soak for 10 minutes if hard) -2 tablespoons shredded coconut -1 tablespoon cocoa Pumpkin Filling: -1 cup pumpkin purée -3 tablespoons Tahini -1 1/2 tablespoon cocoa -1/2 teaspoon mint extract (optional) Directions : 1. Process the crust ingredients in the food processor until it becomes a dough 2. Press dough in muffin cups/molds 3. Blend the pumpkin filling ingredients together and pour over crust 4. Freeze for at least 30 minutes before enjoying *This can be made in one larger pan lined with plastic wrap and sliced as a pie

A Kids Cherry Smoothie Bowl

I asked Zayn what he wanted for breakfast and he walks to the freezer and pulls out the cherries and bananas... "I want a smoothie bowl." The cutest thing to hear a kid his age ask for something so simple. He said that he wanted to decorate it too. So here you have a cherry banana nicecream bowl for kids (and adults too :), brought to you by Zayn. Yield: Enough for 1 hungry toddler You will need: -1 frozen Banana  -1 cup frozen pitted cherries -2 pitted dates  -Toppings: blueberries, strawberries, coconut chips, rawnola, mango puree  Directions:  Blend all the ingredients together and top with your favorite toppings. Cauliflower Rice Salad

It's interesting the things you can do with a head of cauliflower! The way it turns into a rice that can be used in sushi, stir fries, and as a side dish is so interesting to me. Here I used it as the base of a salad. I hope you enjoy! You will need: Salad: -1 head of cauliflower (chopped) -1 cup diced tomatoes -1 cup chopped mushrooms -A sprinkle of red pepper chili flakes -1/2 teaspoon paprika -1 cup green peas Dressing: -2 peeled oranges -1 tablespoon tahini Directions: 1. Place the cauliflower pieces in a food processor to process into a rice texture 2. Place the cauliflower rice in a separate bowl with the other ingredients 3. Top with the orange tahini dressing or any dressing of choice

Raw Mohito Pie

Thought I would bring back memories from Mexico ☺.  A raw Mohito pie without the alcohol and with all the health benefits... I won't say no to some of that! I also love the scent of lime! Yield: 1 pie You will need: Crust: -2 cups pitted dates (soak for 10 minutes if hard) -1/3 cup of nuts -A splash of vanilla Filling: -3 frozen bananas -5 fresh mint leaves (or 1 Tablespoon of dried mint leaves) -Juice and Rind of 1 lime Directions: 1. Chocolate orange nicecream for breakfast 😊 Don't mind if I do! There's something about the combination of chocolate and oranges that just melts my heart. I wanted to create something this morning to remind of those flavours :) Yield: 1 serving You will need: -3 frozen bananas -2 large peeled oranges -1 cup of almond milk (any milk) -1 tablespoon cocoa -1 cup of ice Directions: Blend all the ingredients together and enjoy!

Sunday morning and waking up to think... what's for breakfast??? Of course... some kind of nicecream creation. I had a young coconut in my fridge so I cracked it open and decided to use the meat in this nicecream. Coconut meat adds such silkiness to nicecream! Yield: 1 serving You will need: -3 frozen bananas -1 cup of frozen strawberries -A dash of vanilla -1/2 cup coconut meat -1/4 cup Coconut water -Toppings: date-nut rawnola, shredded coconut Directions: Blend all the ingredients together and enjoy! *Rawnola: Process 1/2 cup almonds, 1/2 cup walnuts, 1 cup pitted dates,  1/2 tablespoon cocoa (until a crumble mixture)

Good morning 🌞. My breakfast of Champions is a chocolate banana breakfast bowl topped with raw granola. Cant ask for much more! Yield: 1 serving Granola You will need: -4 frozen bananas -1 tablespoon carob powder (or cocoa) -Topping: date-nut rawnola and bananas Directions: Blend all the ingredients together and enjoy! *Rawnola: Process in food processor 1/2 cup walnuts, 1/2 cup almonds and 1 cup of pitted dates with a dash of cinnamon (enough to make a crumbly rawnola mix) *Add a splash of water to help with the blending

"White Chocolate and Chocolate Chip" Brownie

Felt like a white chocolate brownie (Moxie's.... Mmmm lol). So got out my little food processor and started this bad boy up! 😊 A Healthier "White Chocolate & Chocolate Chip" Brownie using chic peas. Yield: Small pan You will need: -1 1/2 Cups cooked chic peas -1/2 tablespoon baking powder -3/4 cup apple sauce -1 teaspoon vanilla -1/4 cup oat flour -1 tablespoon ground flax seed -1/4 cup peanut butter -1 teaspoon Cinnamon -A handful carob chips Directions: 1. Preheat the oven to 350F 2. Process all the ingredients together except for the carob chips 3. Mix in the carob chips with a fork and pour into parchment lined pan of choice 4. Bake for 25 minutes. Let it cool before eating

"Fried" Banana With Chocolate

A great idea for an after school snack or a late night treat... A delicious and healthy "fried" banana and chocolate sauce... Feel free to have it with icecream instead! Yield: 1 serving You will need: -2-3 bananas (sliced in half) -A dash of cinnamon -1 tablespoon shredded coconut (optional) -1 teaspoon coconut oil Sauce: -2 tablespoons almond yogurt -1/2-1 tablespoon cocoa -1 tablespoon peanut butter Directions: 1. Sauté the bananas in the coconut oil in a pan over medium heat 2. Sprinkle them with cinnamon and coconut 3. Mix all the ingredients for the sauce. Dip and enjoy!

Cherry Chia Morning Pudding

This has easily become one of my morning staples. I love having something in the fridge that I could grab and devour, knowing in the back of my mind that it's 100% healthy and not full of processed ingredients. You could easily adapt the flavors of this pudding to whatever you like! Yield: 1 serving You will need: -1 tablespoon chia seeds -1 tablespoon flax seeds -1/2 teaspoon vanilla -1/4 cup almond milk -1 mashed banana -1 cup of cherries (no seeds) Directions: 1. Mix all the ingredients together except for the cherries 2. Place in the fridge over night 3. Top with your choice of fruit in the morning!

Peanut Crunch Smoothie Bowl

I don't know anyone who doesn't love peanut butter and chocolate... including me! Zayn and I made this crunchy bowl this morning and enjoyed eating it too. We even topped it with a slice of my Nanaimo bars (see the recipe in previous post). This is just too beautiful for words! It's hard to believe how easy it is to replicate such sugary desserts and to create something that is raw and composed of whole foods and pure goodness for the body. I recreated a famous dessert that I grew up having. I'll be honest though... this version is on point and you don't haveto feel so guilty indulging in 1 or 2 or 3.... pieces :) Yield: 12 bars You will need: Crust: -15 medjool dates (if too hard, soak in water for 10 min) -1 cup shredded coconut -1 1/2-2 tablespoons Cocoa (or carob powder) -1 1/2 cup of any nut (I used a combination of hemp seeds and cashews) Cream Layer: -2 cups cashews (that have been soaking in water for a minimum of 4 hours) -2 tablespoons Maple syrup Chocolate Layer: -3 tablespoons melted coconut oil -1/4 cup cocoa -2 tablespoons Maple syrup Directions: 1. So I must admit that this bowl has been brought to you by Zayn. He insisted on decorating this bowl with me... and taking the first bite! Haha. Who doesn't love a berry chocolate combo? I know that we loved every bite of it! I hope you enjoy! Yield: 1 1/2 serving for you and a kiddo like Zayn :) You will need: Chocolate: -2-3 frozen bananas -1/2-1 tablespoon cocoa (or carob) Cherry: -1-2 frozen bananas -1 cup frozen pitted dark cherries -Toppings of choice (I used cocoa nibs, raw Chocolate peanut butter fudge bites, raw cashews, a scoop of raw berry chia jam, and a drizzle of date caramel) Directions: 1. Mix all the ingredients for each flavour separately and then place them in one bowl and swirl lightly with a spatula. 2. Top with your favorite toppings and enjoy!
