Carrot Cake Streusal

If you like oatmeal crumbles and carrot cake, then this recipe is calling your name! I bought a few bags of carrots and thought about what I could do with them. I wanted to combine them with the nutty flavor and texture of oats and created this cake. It is definitely a great snack or eat a huge slice in the morning and call it breakfast!  Packed with nothing but wholesome ingredients... you can't go wrong! Enjoy!
Yield: 8x8in cake
You will need:
Base:
-1 cup steel cut oats/rolled oats
-1 cup shredded coconut
-1 tablespoon Lucuma powder (mixed with 1 tablespoon of water to create a thick paste to help with binding)
-A dash of cinnamon
-2 ripe mashed bananas
-1 tablespoon melted coconut oil (optional)
-2 tablespoons peanut butter (any nut/seed butter)
-2 tablespoons date paste/maple syrup
-1/2 cup grated carrots (about 1 small carrot)
Topping:
-1-2 tablespoons coconut oil
-2 tablespoons date paste/maple syrup
-3 tablespoons water/coconut milk
-1/2 cup grated carrots (about 1 small carrot)
-2 tablespoons shredded coconut
-1/4 cup dried raisins/mulberries
-2 tablespoons steel cut oats/rolled oats
-A pinch of cinnamon
Directions:
1. Preheat the oven to 350 degrees
2. Using a food processor, mix all the ingredients for the base together for about 1-2 minutes until combined (except for the carrots)
3. Pulse in the carrots for another 30 seconds until combined and press into a parchment paper lined pan of choice
4. Bake the base for 15 minutes until you notice the edges browning slightly
5. For the topping, melt the coconut oil, sweetener and milk/water together over low heat in a pan
6. With the other topping ingredients, blend them in the food processor for only 15 seconds
7. Once the coconut oil mix is melted, mix in the rest of the ingredients and spread over the base (spread the topping down so it sticks to the base)
8. Return the bars to the oven for another 15 minutes until you see a crispy gold topping
9. Allow the pan to cool completely for about 1 hour and then slice them into bars
10. Store in an airtight container in the fridge/freezer until ready to eat
*Feel free to drizzle a caramel sauce overtop of the bars once removed from the oven to cool down. This can help with the loss of any toppings as you begin to slice
