Coconut Oat Bars with Chocolate Peanut Butter Frosting

I decided to make a quick bar after coming home from work. This was definitely a great combination of flavors and can be used in so many ways as a base to a pie, a crumble, bliss balls, or just plain granola bars. Plus... it only took a few minutes to make!
Yield: 8x8in pan
You will need:
Base:
-1 1/2 cup rolled oats
-1 1/2 cup shredded coconut
-1/4 cup peanut butter
-1/4 cup maple syrup
-1/4 cup date paste
-Sprinkle of salt
-1 teaspoon cinnamon
Topping:
-1/2 cup peanut butter
-1 ripe banana
-1 tablespoon raw carob/cocoa powder
-1/2 tablespoon coconut oil
Directions:
1. Using a food processor, mix all the ingredients for the base together until it comes together as a dough
2. Press the base in a lined pan and set aside
3. Blend the topping ingredients together and spread over the base
4. Refrigerate for a few hours until ready to cut into bars. Store in the fridge/freezer until ready to consume!
*Feel free to play around with your choice of sweetener or nut/seed butters
