Peanut Butter Popcorn Granola

Do you ever just desire that added crunch over top of your icecream, oatmeal, or smoothie? Or just wanting a deliciously satisfying crunchy snack that you can eat and not have to worry about all the preservatives and unnecessary additional calories? Well have I got the solution for you! (I'm totally sounding like a car sales person). This granola is definitely a staple in our pantry and I can't keep up with replenishing our supply every week!
Yield: 3 cups of granola
You will need:
-6 cups popcorn
-1 cup gluten-free rolled oats
-A dash of cinnamon
-A pinch of Himalayan salt
-1/3 cup maple syrup
-1/4 cup date paste
-1/4 cup runny peanut butter (heated slightly)
Directions:
1. Preheat the oven to 375 degrees
2. Mix all the dry ingredients together in a large bowl
3. In a separate bowl, mix the maple syrup, date paste and peanut butter until combined
4. Pour the maple mix over the popcorn mix and mix well so that everything is coated
5. Pour the granola on a parchment lined cookie sheet and bake for 15-20 minutes (until browned as desired, tossing throughout the baking process so that everything gets nice and golden)
6. Allow to cool completely before storing in an airtight container for up to 2 weeks
*Feel free to break any larger chunks and add any additional ingredients to suit your fancy! (Nuts, dried fruit, etc.)
*For a nut-free version, just increase the amount of maple syrup and omit the peanut butter
