*Peanut Butter Energy Bites
Have a load of dates now for Ramadan and while waiting to break our fast, I've created these 5 ingredient energy bites. If you don't like dates, you can use raisins, dried apricots or any dried fruit instead (but I must admit that I love the taste of dates!). I top my nana nicecream with a few too! Mmm.
Yield: 16 balls (depends on how big you make them)
You will need:
-1 cup oat flour
-2 cups pitted dates (or raisins)
-2 tablespoons coconut sugar
-4-6 tablespoons peanut butter (any nut/seed butter could work)
-3-6 tablespoons raw cocoa/carob (depending on how chocolatey you would like it)
-A dash of cinnamon (optional)
Directions:
1. Using a food processor, mix all the ingredients together until a dough consistency forms
2. Roll the dough into balls and place in an airtight container in the fridge or at room temperature for up to a week
*Wet your hands slightly to help with sticky fingers when rolling
