Rustic Banana Flour Loaf
Walking through the bulk store, I saw banana flour and thought about the possibilities of what I could make. It was on sale so I had to grab some (because it is very expensive! Would you believe that the bag cost almost $43 at regular price?!). I decided to make a banana loaf with some of the simplest ingredients all thrown together in a food processor. I was pretty impressed with the results too!
Yield: 1 loaf
You will need:
-1 cup banana flour
-1/4 cup peanut butter
-1/3 cup date paste (any sweetener)
-A dash of cinnamon
-2 ripe bananas/1 cup applesauce
-1/2 teaspoon baking soda
-A pinch of Himalayan salt
-1/3 cup coconut water/water/milk
-1/4 cup cocoa nibs/chocolate chips
Directions:
1. Preheat the oven to 350 degrees
2. Using a fopd processor, mix all the ingredients together until combined (except for the cocoa nibs)
3. Pulse in the cocoa nibs/chocolate chips at the end and pour into a parchment lined loaf pan
4. Bake for 30 minutes and allow to cool before eating
5. Store the leftovers in an airtight container in the fridge
