Banana Flour Chocolate Energy Bites
These energy bites are so addictive and are 100% grain free and made of pure goodness. The consistency is nice and chewy and makes you feel like you're biting into a ball of fudge. The banana flour gives it a nice pillow texture too!
Yield: 8 balls
You will need:
-1/2 cup banana flour,
-1/4 cup carob powder
-2 tablespoons date paste
-1/4 cup peanut butter
-2-3 tablespoons water/coconut water/milk
-A dash of cinnamon
-A pinch of Himalayan salt
-1/4 cup cocoa nibs
Directions:
1. Using a food processor, mix all the ingredients together (except for the cocoa nibs) until combined
2. Pulse in the cocoa nibs at the end and roll into desired ball sizes
3. Store in an airtight container in the fridge for up to 1 week
