*The Simplest Overnight Oats

I probably make these oats every weekend. It's such a treat to wake up to on a busy weekend of swimming and other activities. Having something prepared and filling for the whole family is so awesome and plus... you can modify the flavor to suit your fancy every time!
Yield: 3 servings
You will need:
-1 cup steel cut oats
-4 cups water
-Optional additions: raisins, strawberries, banana, peanut butter, seeds, nuts, etc.
Directions:
1. In the evening, bring the water to a boil on stove top
2. Add the oats and stir for 1 minute once it comes to a boil (you may need to lower the heat to prevent overflow)
3. Turn off the heat after the 1 minute has passed and cover with the lid overnight (*I like adding in a handful of raisins at this point too. In the morning the raisins have plumped right up and add such a delicious sweetness and texture to the oats)
4. In the morning, you will see that the oats have fluffed up. When ready to serve, add 1/2 cup of water and stir, just to help thin out the oatmeal slightly and to warm it up. Feel free to skip this step if you prefer a thicker and colder oatmeal bowl
5. Top with any of your additions and enjoy! In this creation I added strawberries and date caramel on top
