*Quinoa Banana Bread

Ripe bananas sitting on your counter? Make some fat-free quinoa banana bread 👌 Easiest recipe and few ingredients... Your kitchen will smell mmm mmm good 😄.

Yield: 8x8in cake
You will need:
-1 cup uncooked quinoa
-A dash of cinnamon
-3 ripe mashed bananas
-1 teaspoon vanilla
-1 cup almond milk
-Add-Ins: raisins, coconut, chocolate chips, nuts, etc.
Directions:
1. Preheat oven to 350F and line baking pan with parchment paper
2. Mix the quinoa and oats together in a bowl
3. In a separate bowl, mix the bananas, milk and vanilla together and add to the quinoa mix
4. Stir everything together until well combined and add your fix-ins if you desire
5. Pour the batter into the pan and bake for 28-30 minutes. Turn the oven off and leave the pan in the oven for another 25 minutes to allow the quinoa to plump up
6. Eat the cake cold or hot and store in the freezer or fridge in an airtight container to retain moistness. Enjoy!
