**4 Ingredient Chewy Peanut Butter Cookies

When I think of chewy peanut butter cookies, I think back to when I went to daycare as a child and we would look forward to making peanut butter cookies and eating them with our daycare family. It was such a treat and I remember the whol daycare canter smelling like a bakery. It's amazing how certain scents can take you back to precious moments in time. I hope you enjoy!

Yield: 6 cookies (can vary depending on size of cookies)
You will need:
-1 cup peanut butter (seed butter will work too)
-1 cup pitted dates
-1 chia/flax egg (mix 1 tablespoon of chia/flax seed with 3 tablespoons of water and let it stand for at least 10 minutes to gel)
-A splash of vanilla
Directions:
1. Preheat the oven to 350F
2. Blend the ingredients together in a blender or food processor and roll into a ball
3. Place the cookies on a parchment lined cookie tray and squish the center down lightly with a fork
4. Place the cookie sheets in the oven to bake for 12 minutes and allow to cool slightly before deciding to devour them!
*Feel free to add chocolate/carob chips, raisins, crushed nuts, cinnamon, etc.
