**Sweet Potato Rice Balls

One of the easiest and fastest things I've ever thrown together... and only 3 INGREDIENTS!! Love the simplicity of cooking 😊. Happy Tuesday everyone!

Yield: 8-10 balls
You will need:
-1 cup cooked brown rice
-1 large sweet potato (baked and mashed witgout skin)
-2 tablespoons fresh dill (any seasoning)
Directions:
1. Preheat oven to 350F
2. Mix all the ingredients together until fully combined
3. Roll balls of whichever size you like (you can even make them patties for a veggie burger option) and place on a baking sheet
4. Bake for 15-20 minutes (cooking timed may vary based on size of balls), until they have a golden outer edge
5. Eat as is or enjoy with a dipping sauce
